Founded in 2012 by three-Michelin-starred chef Antoine Westermann, Le Coq Rico became Le Coq & fils in September 2021. The term *fils* refers to lineage and heritage, reminding us that Le Coq watches over its successors. To go further and affirm chef Antoine Westermann’s commitment to ethical, sustainable, and virtuous food, he chose to focus on exceptional poultry, raised with strict respect for animal welfare.

Here, we talk about full traceability, heritage breeds, good genes, direct relationships with committed breeders and producers, animal welfare, and a chef who champions the cause. A unique experience, signed by chef Antoine Westermann, for poultry lovers: quail, pigeon, guinea fowl, duck, rooster, hen, goose, and chicken—each telling the story of France’s terroirs.
Le Coq & fils is known as a *Poultry Steakhouse* or *Poularde House*: a place where we love to welcome our guests with open arms. More than a rotisserie, it’s a tribute to poultry, beginning with a multitude of shareable amuse-bouches.
Before being spit-roasted, the birds are slowly poached in a broth using chef Antoine Westermann’s exclusive technique.
They are served whole, to share between two, three, four or more, accompanied by garlic confit, jus, house-made potatoes, poultry-broth purée, macaroni gratin, and other seasonal suggestions. Vegetarian friends will delight in the wide choice of plant-based amuse-bouches, as well as the famous Z’oeuf burger.
As for sweet tooths, they’ll find their happiness with the famous vanilla-scented Bourbon floating island, caramelized brioche with seasonal fruit jams and pastry cream, and our pots of pistachio, lemon, and chocolate ganache. Truly chef-quality desserts!
